The island's unique history and warm climate has lead to an abundance of ingredients and unusual combinations of flavours. Nuts, lemons, tomatoes, grapes, olives, candied fruit and spices make up the basis of much of Sicilian cooking and have found their way into the summer menu.
The wine menu has also been refreshed with a seasonal choice of new wines carefully chosen for their range of summery flavours and ideal match with the Sicilian inspired food.
Arancini
Arancini translates as 'little oranges' because of their golden orange colour and shape and are Sicily's most popular street food. Bite-sized balls of risotto are stuffed with creamy mozzarella, ham and peas and served with fresh red pesto and a sweet red pepper dip - a good non dough based starter.
Trio Verde ('three greens')
This textured side salad is packed full of fresh tasting, super healthy ingredients of tender broad beans, green beans and sweet peas on wild rocket and baby spinach - with parmesan and a lemon and watercress dressing.
Il Padrino (the Godfather)
We couldn't have a menu inspired by Sicily without a nod to the Cosa Nostra (the mafiosa). Il Padrino, the Godfather of our new menu, is bursting with different flavours of torn chicken, marinated Italian seasonal vegetables of aubergine, courgettes and peppers, mozzarella and sunblush tomatoes on a crispy base with a red pesto sauce.
We recommend the Merlot, La Tunella, a bold, full bodied wine with blackcurrant and plumy flavours.
Caponata
Our pizza is inspired by the traditional sweet and sour stew that is so typically Sicilian. Creamy bocconcini mozzarella, sweet Santos tomatoes and fresh basil are added to slow cooked aubergine, olives, pine nuts and capers- traditionally found in Caponata. This pizza has distinctive flavours and makes a light choice for summer.
Our perfect wine partner is the Sauvignon Blanc, Grigolli, deliciously dry with summer grassy flavours and a clean fruity finish.
Bocconcini
A summer salad with sweet flavours of Italian char-grilled peppers, aubergines and courgettes tossed in Sicilian lemon and watercress dressing with creamy bocconcini mozzarella balls, olives, rocket and baby spinach with marinated artichoke heart served with dough sticks.
An ideal wine match is the Grillo, Firriato, an excellent dry Sicilian white, full flavoured and fruity with a nutty finish.
Sicilian Lemon Sorbet
At the base of Mount Etna in Sicily, children gather with bowls to collect freshly fallen snow which they take home to be turned into sorbet. We couldn't wait for snow but we have taken the juice from the sweetest Sicilian lemons and folded in just enough sugar to make the most delicate, refreshing Sicilian Lemon Sorbet. Served with an Italian, dark chocolate straw.
Cassata
Sicilians really love desserts and Cassata is one of their favourites. Ours is a colourful, chunky wedge of Sicilian vanilla ice-cream, blended with pieces of candied fruit with a thin slice of chocolate ice-cream running through it.
